Ingredients
1 Bottle Red Wine
1 box spaghetti noodles (I like angel hair)
3 Tablespoons EVOO
1 LB pancetta (I use uncured bacon since we are a nitrate free family)
3 large Portabella Mushrooms
3 Sprigs of Fresh Rosemary, chopped
3 Garlic Cloves - chopped
1 Tablespoon Red Pepper Flakes
4-5 Cups Dark Greens your choice - I use Fresh Spinach
1/4 Teaspoon Nutmeg
1/4 Cup Parmesean Cheese, grated
Directions
Pour wine in large pot, fill rest with enough water to boil the pasta. Bring wine and water to a boil. Add salt and pasta.
In large skillet, add EVOO twice around, add bacon over medium heat. Cook until browned, then place on paper towel. Add mushrooms (same skillet), season with fresh chopped rosemary. Push mushrooms to side, Add rest of EVOO garlic and red pepper flakes to center of pan. After a minute, toss with mushrooms. Add spinach to the pan, season with salt, pepper, and nutmeg. When greens are wilted down, add about 2 ladles full of startchy wine liquid to pan, and cook for a minute to reduce it. Drain pasta, add to skillet, along with bacon pieces and about 1/4 cup cheese. Toss pasta for a minute to meld flavor, then serve with extra cheese as desired.

Dean Playing - Simple 'Toys' Bring Joy
Dean also happily waves socks and burp cloths in the air in the same manner! Those cute boots that Amy crocheted fit perfectly right now.
Box Climbing & Boys Nap Time
I crocheted this Chicago Bears hat for Dean - Just in time for game 1! Yes he is playing with an empty swiffer mop.
Dean can climb! He did this all by himself and was very very proud!
Fussed for a bit and then cuddled up and fell asleep in what looks like an uncomfortable position.
First Ribs! Andrew smoked them and we bought some Annie's Organic BBQ sauce (no honey no worries!). He loved them!!!
